Bacalhau à Gomes de Sá

This recipe is a fine example of traditional portuguese cuisine. Roasted codfish à Gomes de Sá is one of the many memories I keep of the delicious dishes my grandmother Lúcia used to gift us with. Inspired by portuguese traditions with angolan influence, the tastes she brought to every dish she made are still hard to replicate. 
Now, I can understand how much it motivated her, knowing that we were about to arrive, so much so that she cooked for hours on end, with immense dedication, bringing to the table beautiful roasts and stews, soups and puddings. I still think my version of the dish can’t quite compete with what she offered us, but it is nonethless a nice and comforting family meal, because the best food is meant to be shared.

Ingredients (serves 6)

4 pieces of salted codfish (you can use regular cod)
6 potatoes, big enough for 6 people
4 eggs
3 garlic cloves, smashed
1 big onion
2 bay leaves 
olives
parsley 
salt
paprika 
extra virgin olive oil

Method


The night before, remove skin and bones from the codfish, and shred it into bite size pieces. Let it sit overnight, in a big bowl with plenty of water, for the salt to dissolve. In the morning, taste a little bit of the codfish and check for salt. If it is too salty, drain and place it again in the bowl with fresh water for a few more hours. Keep checking until it’s just right, otherwise you can end up rinsing away all of the fish’s salt.

Drain the codfish in a cloth, squeeezing it, and put it to the side. Peel the potatoes and cut them into half-circles, 5 to 7mm thick. 

Heat the oven to 180ºC.

Place the potatoes and drained codfish on a sheet pan, tasting the codfish so you know how much salt to add. Shower it with sliced onions and smashed garlic, and season it with salt and paprika. Mix everything with your hands and scatter it evenly, dousing it with a generous amount of extra virgin olive oil. Roast it in the middle rack of the oven, for about 45 minutes. 

In the meantime, boil 4 eggs (from 12 to 15 minutes, you want them hard boiled). Peel and slice them into smaller pieces (you can use a egg slicer here, in opposing directions so you get tiny pieces).

Once the potatoes and codfish are cooked (about 35 minutes), scatter the eggs over and roast it for a little longer until it crisps and browns.

Remove the pan from the oven, sprinkle with olives and parsley. Now, it’s time to eat! Dont forget to soak the liquids in the pan with slices of bread in the end!

Esta receita é um óptimo exemplo de interpretação da tradicional cozinha portuguesa. Assado no forno, este bacalhau à Gomes de Sá, é uma das memórias que guardo dos deliciosos pratos que a avó Lúcia tanto gostava de nos presentear. Baseados nas tradições portugueses e com alguma influência angolana, os sabores que conseguia dar a cada receita eram estranhamente irreplicáveis. Bem entendo hoje a motivação que lhe dava saber que estávamos para chegar e, assim, preparava, durante longas horas e com dedicação ímpar, os melhores assados e refugados, sopas e pudins. Ainda que não consiga reproduzir inteiramente o sabor original, aqui fica a sugestão de um óptimo motivo para enriquecer o almoço ou jantar em família, porque os melhores pratos só fazem sentido partilhados.

Ingredientes (para 6)

4 postas de bacalhau
6 batatas grandes, suficientes para 6 pessoas
4 ovos
3 dentes de alho
1 cebola grande
2 folhas de louro
azeitonas
salsa
sal
colorau
azeite extra virgem

Como fazer

Na noite anterior, remove a pele e espinhas do bacalhau seco, e rasga-o em pedaços. Coloca o bacalhau num alguidar com água e deixa a demolhar durante a noite. De manhã, prova um pedacinho do peixe para verificar o sal. Se continuar salgado, muda a água e deixa ficar mais umas horas a perder o sal.

Pré-aquecer forno a 180ºC. A preparação demorará cerca de 30 minutos mais 40-50 minutos no forno.

Tira o bacalhau da água, espreme-o bem e reserva num prato. Descasca as batatas e corta-as a meio. De seguida corta-as em fatias grossas, com cerca de 5 a 7mm de espessura, criando meios círculos. Se usares batatas pequenas, podes cortar em rodelas com a mesma espessura.

Espalha as batatas e o bacalhau sobre um tabuleiro de forno. Corta a cebola às rodelas, esmaga os 3 dentes de alho e coloca tudo no tabuleiro, juntamente com as duas folhas de louro. Polvilha com colorau e sal grosso (atenção que o bacalhau já tem sal). Envolve tudo com as mãos e espalha numa só camada. Rega com uma generosa quantidade de azeite extra virgem e coloca no forno.

Entretanto coloca os ovos a cozer. Deixa cozer bem (ferver cerca de 12 a 15 minutos). Descasca os ovos e corta-os em pedaços. Podes usar um cortador de ovos e fazer um corte horizontal e outro vertical para que fique em tiras pequenas.

Quando vires que o bacalhau e as batatas estão cozinhadas mas ainda não dourados, abre o forno e espalha o ovo por cima de todo o tabuleiro.

Depois de estar com aspecto dourado, tira do forno, adiciona as azeitonas e polvilha com salsa picada.

Agora é só servir e não te esqueças de regar com o molhinho que fica no fundo do tabuleiro. Podes acompanhar com umas tirinhas de pão para limpar o prato no fim!
