Lussekatter (Pães Doces de Santa Luzia)

Esta é a versão herege - sem leite ou ovos - da receita que herdei do meu avô dos tradicionais bullar suecos. Aqui, na sua versão natalícia, a receita apenas difere na forma, recheio e no açafrão.

Lembram-me este homem que acordava às 5 da manhã para ter os biscoitos prontos a tempo do pequeno-almoço. Durante os tempos de levedura e espera escutava música clássica na rádio, observava e identificava os pássaros que voavam no jardim à frente da janela da cozinha.

Ingredientes

(para 40 pãezinhos)
125gr de óleo de côco refinado (sem odor/sabor)
0,5L de leite à escolha (uso normalmente amêndoa ou aveia)
50gr de fermento de padeiro/fresco
1,5dL de açúcar
1gr de açafrão
1 colher de chá de sal
11dL / 600gr de farinha branca (tipo 55/65) de boa qualidade
4dL / 300gr de farinha integral de boa qualidade

q.b. uvas-passas
q.b. aquafaba (água de cozedura de grão-de-bico - sem especiarias ou muito sal)

Como fazer

Derreter o óleo de côco/ manteiga numa pequena panela e juntar o leite a seguir. Aquecer até chegar a 37ºC (aproximadamente temperatura do corpo - à falta de termómetro, testar com o dedo). Pôr de parte.
Moer o açafrão e o açúcar num almofariz.
Esmigalhar o fermento numa taça grande, juntar a mistura do óleo e leite aquecido, e de seguida o açúcar com açafrão e o sal. Misturar bem até estar tudo homogéneo e sem grumos. Deixar o açafrão tingir ligeiramente a mistura. O leite e óleo aquecido não deverão estar demasiado quentes, senão podem afectar a levedura.
Aos poucos juntar a farinha, até a consistência ser sólida mas pegajosa (não deverá ficar totalmente “seca”). Misturar durante 5-10 minutos na batedeira com função de amassar, ou 10-15 minutos à mão. O glúten da farinha deverá ser trabalhado até a massa ficar elástica, brilhante e lisa, e desprender facilmente dos bordos da taça.

Deixar a massa descansar na taça coberta com um pano, durante cerca de 1 hora. O tempo de levedura poderá variar, dependendo da temperatura da massa e da cozinha - mais quente, mais rápido e vice-versa.

Entretanto preparar três ou quatro rectângulos de papel vegetal, ou usar uma base de silicone que caiba no tabuleiro do forno. Assim que a massa tiver aumentado até cerca do dobro do volume inicial, dividir em quatro pedaços iguais, e voltar a dividir cada quarto em dez pedaços. Trabalhar cada pedaço de massa enrolando em forma de salsicha (ca. de 30-40 cm), e de seguida enrolando cada ponta em sentidos opostos, até se encontrarem a meio em forma de “S”. Este é o método tradicional, mas pode ser feita qualquer forma à escolha, desde que a espessura de cada biscoito se mantenha semelhante (para depois cozinharem ao mesmo tempo).

À medida que as formas se vão fazendo, colocá-las nas bases preparadas para o forno, com alguma distância entre si. Cobrir com um pano, e deixar levedar por mais meia hora. 15 minutos antes desta meia hora ter passado, ligar o forno a 225 graus. Antes de levar os pãezinhos ao forno, adornar com uvas-passas: as formas em “S” normalmente levam uma passa no centro de cada espiral.  Pincelar cada pãozinho com um pouco de aquafaba (pincelar só mesmo antes de irem ao forno, senão a massa absorverá o líquido). Também é possível usar leite em vez de aquafaba para pincelar os biscoitos.

Cozer cada tabuleiro no centro do forno cerca de 8-10 minutos, até a superfície estar ligeiramente tostada.
Para os adultos responsáveis, os pãezinhos combinam bem com glögg (vinho quente com especiarias)!

A receita pode ser feita com cerca de 150gr de massa madre de trigo em vez de fermento de padeiro, seguindo os tempos que esta técnica requer.

Here I decided to make a heretic milk- and egg-free variation of the dough recipe I inherited from my grandfather, originally for the Swedish bullar, but here with the Christmas version that only differs in shape, filling and saffron. By indirect association, it reminds me of this man that would wake up at 5 am in order to have the buns freshly baked in time for breakfast. During the dough-rising and waiting times, he would listen to classical music on the radio and identify the birds flying in front of the kitchen window.

Ingredients

(makes 40 buns)
125gr refined coconut oil (with no aroma or flavour)
0,5L milk of choice (I usually use almond or oat milk)
50gr fresh yeast
1,5dL cane sugar
1gr saffron
1tsp salt
11dL good quality white flour
4dL good quality wholewheat flour

raisins
aquafaba (chickpea cooking water - without spices or a lot of salt)

Method

Melt the oil in a small pan, and add the milk. Slowly heat the pan until it reaches approximately 37ºC - measure with a thermometer or, if you don’t have one, use your finger finger! Put aside.
With a portar and pestle, grind the saffron and sugar together.

Carefully crumble the yeast into a big bowl and add the milk and oil mixture, with the saffron, sugar, and salt. The milk cannot be too warm, otherwise it will kill the yeast. Whisk the mixture until there are no crumbs, and let the saffron gently tint this mix.

Add the flour by the spoon, until the dough reaches a thick but sticky consistency (it can’t be “dry”). Use the mixer with a dough padle for 5-10 minutes, or knead the dough 10-15 minutes by hand. Work the dough until it is elastic, shiny and smooth, and no longer sticking to the bowl. 
Let the dough rest, in the bowl covered with a cloth, for nearly one hour. The rising time might change depending on the room and dough temperature (the warmer, the faster and vice versa).

Meanwhile, prepare three or four sheets of baking paper/baking-safe silicone. Once the dough has doubled it’s initial size, divide it into approximately equal quarters, and each quarter into ten small pieces. Work each piece by shaping it like a long sausage (ca. 30-40 cm) and then roll each tip in opposite directions, so that when they meet in the center, the result will be an “S” shape. This is the most typical shape, but you can get creative at this stage, bearing in mind that each piece should have more or less the same volume, so that it bakes in the same time.

Place each shaped bun in the baking sheets, distanced apart, and then cover the baking sheets with a cloth once again for the second rise, around half an hour. 15 minutes into this half an hour, turn the oven on at 225C/440F. Just before the buns go in the oven, decorate them with raisins -  the usual “S” shape has normally one raisin in the center of each spiral. Just before going into the oven, brush each bun with aquafaba or milk. The buns should only be brushed just before going into the oven, otherwise the dough will soak up the liquid.
Bake for 8-10 minutes in the center of the oven, until there is a slight darker tone in the buns.
For the responsible adults, these buns go very really well with glögg (muller wine).

If you want, it is also possible to replace the fresh yeast with ca. 150gr wheat sourdough and follow the required timings for this technique.
